Zucchini Pizza

My new favorite recipe!!

4 cups shredded zucchini (squeeze out the moisture the best you can)
1/2 tsp salt
2 large eggs
2 cups mozzarella/parmesan mix shredded cheese
1 tsp italian seasoning
1 cup chopped onion
1 cup chopped green pepper
2 cups pizza/marinara sauce
1 lb italian turkey sausage

Preheat oven to 400.  Mix shredded zucchini, salt, eggs, italian seasoning, and 1 cup of the cheese in a large bowl.  Spread mixture in the bottom of a 9x13 casserole dish (or two 8x8 dishes).  Bake this "crust" for 20 mins.  

Remove casings from turkey sausage if you're using links.  Brown sausage in a large skillet.  Add onion and green pepper and cook until a little softened.  Stir in marinara sauce and cook until heated through.  Add turkey mixture to the top of the zucchini "crust" and then top with the rest of the cheese.

At this point you can either bake it @ 400 for about 25-30 minutes or wrap it up and freeze it.  If frozen, thaw in the fridge over night and then bake.  

I usually cut it into 8 servings.  Per serving: 253 calories, 14g fat, 13g carb, and 18g protein.
